Croatian Boogie Lab to open in New York

Boogie Bakery, a Croatian brand known for its sourdough bread and pastries, is making waves on the global stage, including supplying Delta Airlines. 

Emerging from the popular bakery and bistro Boogie Lab, the company recently announced the creation of a new division, Boogie Technology, aimed at revolutionising the production of artisanal baked goods, Poslovni dnevnik reported.

Boogie Bakery has earned its reputation by developing unique technologies for sourdough production. The process relies on natural fermentation using lactobacilli and yeast, enabling industrial-scale production with minimal competition.

This innovation has propelled the brand into international markets, including a significant presence on Delta Airlines flights and exports to Dubai.

Karlo Vulin, co-founder of Boogie Bakery, revealed that Boogie Technology will focus on automating and scaling sourdough production while maintaining its commitment to traditional fermentation methods.

The new company will also leverage artificial intelligence to optimise food production processes.

The development of new technologies will be based in Zagreb, with plans to establish a second office in New York. The US office will focus on implementing solutions and driving growth in key international markets.

Boogie Technology’s goals include standardising artisanal bread production, from starter cultures and dough mixing to fermentation and baking.

Collaborating with experts from various fields, including scientists from Croatia’s Faculty of Food Technology and the Ruđer Bošković Institute, the company is actively hiring to build its team.

Boogie Bakery’s expansion into the US began 18 months ago, following an approach by Delmonico’s, a prestigious restaurant owned by Croatian-American restaurateurs.

Today, the company exports four containers of sourdough bread monthly, serving over 150 clients, mainly in New York. Plans are underway to invest $20 million in a new production facility in the US to meet growing demand.

Their success has also extended to Delta Airlines, with Boogie Bakery products now available on flights between the US and Europe in both first and economy classes.

Additionally, the company has entered the Gulf market, shipping its first container of goods to Dubai in December.

What began as a small family-run bakery in Pakoštane has become a global success story, driven by innovation and technology.
